Pepperoni and Mozzarella. Pizza Time?

Sexy Nerd wanted to order a pizza. I wanted to save our money. So, we bought some pepperoni and mozzarella, which came out to less than the price of one Pizza Hut pizza. There was a problem though. We were out of quick & easy instant pizza dough mix, (which is a fantastic product, in case you've never tried it). Sure, we could make our own pizza dough from scratch, but that's messy and takes a long time. We wanted to eat our pizza ASAP! So, we made one pizza with a tortilla: "One pizza", you ask? "One teeny tiny tortilla pizza for 2 people?" Yes. Sadly, in addition to being out of instant pizza dough mix, we were also out of tortillas! So, we decided to use the next best thing and turned to the cookie jar. "The cookie jar", you ask?? Yes, of course the cookie jar! Where do you keep your biscuits? These seemed like they would make excellent little pizzas. And they did. Yum, yum, yum, yum, yum!

Sweet Carrot Pancakes with Marshmallow Creme Recipe

Despite all the carrots, I wouldn't exactly call this recipe healthy. It sure is yummy though! This would be a fun breakfast to have on Easter or to serve to company at a spring brunch. First, shred approximately 5 carrots in a food processor. You should end up with 2 cups of shredded carrot . Put this into a large bowl. Mix in 1 egg, 1 cup of milk , (any kind will work) 1 Tbs of vanilla, 2 Tbs of apple sauce , and 1/4 of a cup of brown sugar . In fact, add a little less than 1/4 of a cup. These are going to be sweet enough without going crazy with sugar, (I assure you that this is the only time I will ever, EVER say not to go crazy with sugar!) Back to your food processor. Use it to finely chop 8-10 macadamia nuts . No macadamia nuts? Sounds like it's time for a visit to Hawaii. Until then though, other nuts, like walnuts or pecans, should work just fine. Mix the chopped nuts in with the other ingredients. Now it's time to add some dry ingredients. Mix in 2 ts

15 Minute Pizza Dough

We added herbs to the dough, (parsley, oregano, garlic powder, basil, and onion salt,) and topped our pizza with frozen spinach, parmesan and mozzarella cheese, pepperoni, green onions, crushed red pepper, and garlic. We rolled out the dough as thin as possible and poked lots of tiny holes in it with a fork, to prevent air bubbles. "No photo", you ask? Nope, the 6 serving pizza was gone before I could grab the camera.

Krispy Kreme Doughnuts Copycat Recipe

Since Sexy Nerd had to work yesterday, while I got to lounge around the house, I thought it would be nice if he came home to some tasty doughnuts. I found the recipe here . Oooh, ingredients!   The first step was to "scald" 1 cup of milk. I'm not sure that this actually made any difference whatsoever. Next, the butter. Yummy. Melt, darn you!   Once the milk was thoroughly scalded, (pfft!) it was time to cool it down. Thank goodness for YouTube when waiting for your originally cold milk to cool back down. Go Britney! Beat some eggs.  Sift some flour. Ooh, that falling flour is beautiful! It's a pity that the sifter is covered in water spots. Get everything mixed nicely.   The original Recipezaar recipe resulted in dough that was much too sticky to work with. Adding additional flour fixed the problem. But how was I going to get these doughnuts to look doughnuty? Sexy Nerd & I don't have any cookie cutters. Seriously! Clever? Oh yes!

Cornbread Muffins...with Hot Dogs and Spinach!

OMG! These cornbread muffins are yummy!You know that feeling you get when you eat sooooo much? The feeling where you just want to waddle around the rest of the afternoon and do nothing but complain about how full you are? I'm there. I had the day off from work and decided to do some much needed tidying up around the house. While cleaning out the pantry, I discovered a few pouches of cornbread mix. Printed on each was Better If Used By 21NOV2009. 2009?? Not wanting to let my purchase go bad, (though, some would probably argue that it already had gone bad) I sprang into baking mode, conveniently leaving no-fun-whatsoever cleaning mode in the past. I had no intention of blogging about this, but the finished product was just too tasty not to share. Look at all that muffiny (yes, muffiny!) goodness. Recipe: Toaster Oven Quiche (It's Like a Pizza Souffle!)

 This recipe is wonderful. It's quick, easy, and doesn't make a mess or heat up the kitchen. Ooh, look at all this tasty cream. The next time I take a photo like this, I'm totally going to make two egg yolk eyes staring eerily out from the bowl. Is this 'The World's Greatest Toaster Oven'? You betcha! It's also a convection oven. Kinda sorta fancy, right? Sexy Nerd does not like quiche. Pica does though. Yeah right. Whatever, Sexy Nerd! By the way, this might be the longest that Pica has ever stood still! Toaster Oven Pizza Quiche Souffle (adapted from Orangette , who is awesome) (Serves 3 regular people or 1 Sexy Nerd) 1. Grease a toaster oven-sized pan 2. Whisk 1/2C + 1/8C cream with 2 eggs. Add a pinch each of salt, chili powder, and nutmeg. 3. Add 1 1/2 tsp. of flour. 4. Set your toaster oven to 350F 5.
