This reader-favorite recipe is *almost* as popular as my Cake Mix Cookie Bars recipe.
When making Cake Mix pancakes, the scrumptious possibilities are endless. Red Velvet cake mix pancakes. Chocolate cake mix pancakes. Butter Pecan cake mix pancakes. Funfetti cake mix pancakes. (Yes, Funfetti cake mix pancakes!)
With this 2-ingredient recipe, you can turn your favorite cake mix into your favorite pancakes. Pancake making at its finest.
While on your superhuman kick, you think I'm going to make my family pancakes for breakfast. Not just any pancakes - the best pancakes ever. I may even serve them as breakfast in bed! You pull out your favorite pancakes pan. Yeah, you're awesome sauce.
But oh no! You're out of eggs. No pancakes today, right?
I was once like you (minus all that junk about cleaning and organizing), dreaming of pancakes that could never be. Well, guess what? It turns out that you don't need eggs to make pancakes. No, you do not even need Bisquick. And your pancakes will actually be better for it.
No eggs? No problem. Cake mix pancakes to the rescue!
All you need are two ingredients, cake mix and milk. (If necessary, the second ingredient can be substituted with plain ol' water. You might consider going to the grocery store sometime...) These are so easy and good that this has become my go-to pancake recipe. It makes such fluffy, scrumptious pancakes that I even serve them to company.
There are other cake mix pancake recipes out there that have you add things like baking powder, flour, and sugar. It's a cake mix - all these things are already in there for you! There's no need to complicate your morning.

By the way, I've also tried this recipe for waffles. They're okay, but kinda crisp and dense - not nearly as good as when made into pancakes, which are light and fluffy and flavorful. I wouldn't recommend this recipe if you're making waffles.

2 Ingredient Cake Mix Pancakes
Serves 3
2 C cake mix
3/4 C milk
1/2 C water (Please don't tell me water counts as an ingredient. Come on.)
Easiest Directions to Make the Easiest Pancakes Ever
1. Measure the liquids into a bowl (or simply into an extra-large measuring cup - hooray for fewer dishes!) and then add the cake mix.
2. Stir everything together. The batter shouldn't be too thick or too thin - think of the consistency of all the traditional pancakes you've made over the years.
This is me trying to be all artsy and whatnot. Really, it just made a mess.
3. Let the batter sit for a few minutes. While waiting, spray your best pancake pan with nonstick spray and heat it on the stove on Medium. We like to use an enormous Lodge cast iron pan.
They look exactly like regular pancakes. You'd never guess these have only 2 ingredients.
4. (Honestly, I think you guys can figure out the rest from here.) Pour or spoon the pancake batter onto the hot pan in your desired size/shape. After approximately 1 minute, bubbles should form. Flip the pancakes and cook for about another minute.
Ta da! You're done. Piece of (pan)cake, right?
Looking for a vegan pancake recipe? Use a vegan cake mix, such as Duncan Hines, and a non-dairy milk.
Not surprisingly, cake mix pancakes are sweet like cake. You really don't need to add any syrup or mix in any chocolate chips. That said, fresh blueberries added to the batter? Heaven.
This one tastes better than it looks. Funfetti cake mix and frozen blueberries = breakfast perfection
(Just go ahead an ignore that waffle on the bottom. I've already advised against making this recipe into waffles.)
Which cake mix flavor makes the best pancakes? In this case, I think basic Yellow is the most similar to a typical pancake, although White is a close second. I've also had delicious results making this recipe with Funfetti and Betty Crocker Butter Pecan. Funny enough, as big of a chocoholic as I am, I've never tried this with Devil's Food, German Chocolate, or any other rich cake mix. I'm sure the results would taste amazing, but I don't think they would taste like pancakes.
Fun birthday idea: use the cake mix on the right and surprise the birthday boy or girl with pancakes in bed, complete with sprinkles and a candle.
To normal people, like my husband, this tip is going to sound weird. To weird people, like me, it's going to make perfect sense. These pancakes have a better mouthfeel than traditional pancakes. Do you know what I mean? Like, pancakes can sometimes leave my mouth with a dry, almost-greasy film. It isn't pleasant. I'm happy to report, for all my fellow weirdos, that the texture of these cake mix pancakes is A-okay. (Maybe I have a sensory disorder. Who knows?)
