My Amerisleep AS3 Unboxing Video (Surprise, my voice is ridiculous!) If I can (just barely) do it, you can totally tackle a bed-in-a-box by yourself. Updated 10/15/22 Amerisleep's AS5 was recently featured as the 'Best Soft Mattress in a Box' by Good Housekeeping , with the panel of reviewers noting: Pressure relief for side sleepers Taller than other boxed mattresses Good customer service Amerisleep Mattress Reviews We've been happy Amerisleep customers since purchasing our first AS3 mattress more than 9 years ago. Now we also have an AS2 and an AS4 (the AS3 is still our favorite). Born with chronic insomnia (even as a baby - my family insists I was a nightmare), the struggle to improve my sleep is my life. My husband, the overly-analytical mechanical engineer, was initially skeptical of a mail-order mattress, but he was quickly won over. 2012: Wine glass test, sans wine. I was fairly confident our brand-new mattress would pass with f
You know how some coleslaw recipes are too goopy or too dry or too "blah"? My Sexy Nerd used to insist he hated all coleslaw...until he tried this.
Thanks to food blogger Reeni, whose Honey Lime Dressing recipe inspired this. It helped jazz up my usual coleslaw recipe with tangy sweetness. The shredded coconut and pumpkin seeds elevate it above the coleslaw slop you get from KFC.
Not that their coleslaw slop isn't tasty (actually, SN insists it is not at all tasty), but we're going the homemade (with love!) route with this coleslaw recipe.
Easy Coleslaw Recipe for People Who Hate Coleslaw
Ingredients:
1/3 C Miracle Whip or mayonnaise
1/3 C sour cream or plain yogurt
1 Tbsp honey
1 Tbsp brown mustard
1 Tbsp apple cider vinegar
1 Tbsp lime juice
1/3 of a green cabbage, shredded
1/3 of a red cabbage, shredded
1 large carrot, shredded
1 celery stalk, diced
1/4 C shredded coconut, toasted
1/4 C pumpkin seeds
salt and pepper to taste
Combine the first 6 ingredients in a large container with a lid. Cover and shake well until combined. Add the remaining ingredients. Re-cover and re-shake.
You can enjoy this right away, but it tastes even better if you let it mellow in the fridge for an hour. I'm not patient at all (in fact, my blog's tagline used to be "patience has no place in my kitchen"), so I usually have a little now and the rest later.

On a side note, isn't he great for letting me take a photo of him while he tries to relax in his pajamas? He knew I was going to put this online...I think...
On yet another side note, I just noticed that Sexy Nerd's robe matches the lamp shade. Ha!
Not too goopy or too dry or too blah? Check!

Does this look like a Sexy Nerd who doesn't like coleslaw? Even he cannot resist the awesome combination of veggies & dressing.
