Surprise - it's (almost) healthy! I cooked up a big batch of collard greens in the Instant Pot (lots of great IP collard green recipes online, plus my own below). You can also make them the conventional way, but I love that I can just throw everything in the Instant Pot and forget about it.
Spread the cooked collards in the bottom of a baking dish, top with a layer of cottage cheese, then a layer of mozzarella, and finally top everything with slices of pepperoni. Broil it for a few minutes.

Collard Greens Instant Pot Recipe
Ingredients
- 1 ham bone (Don't have this? Substitute a handful of pepperoni.)
- 1 white or yellow onion, sliced
- 1.5 C chicken or vegetable broth
- 1 lb collard greens, chopped
- Generous sprinkles of black pepper, garlic powder, crushed red pepper flakes, and Italian seasoning
- 1/8 C balsamic vinegar
Method
1. Throw all of the ingredients EXCEPT THE VINEGAR into your Instant Pot in the order listed.
2. Seal and cook for 35 minutes, followed by a slow release.
3. Stir in the vinegar.
Collard Pizza Lasagna Recipe
Ingredients
- Cooked collard greens (See recipe above)
- 16 oz cottage cheese (I use nonfat)
- 8 oz mozzarella cheese
- 20 slices of pepperoni
Method
1. Press all of the collard greens into a baking dish. (I use an 8 x 10 pan.)
2. Top with the cottage cheese.
3. Top with the mozzarella cheese.
4. Top with slices of pepperoni.
5. Broil until lightly browned. (This goes from perfect to burnt in only a few minutes - keep an eye on it.)
You can easily adapt this recipe to be more like your favorite pizza if pepperoni is not your thing. As a former Pizza Hut manager though, it's my firm belief that pepperoni is everyone's thing.
